Coriander Pickled Pesto
2 cups loosely packed fresh cilantro (aka coriander)
1 cup loosely packed fresh parsley
1/4 cup walnuts
1/4 cup low-fat sour cream
2 tablespoons olive oil
2 large garlic cloves, crushed
1/4 teaspoon ground black pepper
In blender or food processor, blend ingredients until smooth.
2 tablespoons seeded, minced pickled cherry peppers
Stir in pickled cherry peppers.
Makes 1 cup
Serving suggestion: Place dollop of pesto on top of fish, chicken or turkey.
