Couve a mineira
(Brazilian Style Collard Greens)

4 to 5 bunches of collard greens (or kale)
butter (use 1/2 tablespoon for every cup of shredded collards)

Wash the collard greens. Remove the stems and roll the leaves tightly together. Slice into very thin strips with a sharp knife.

Just before serving, melt the butter and add collard greens. Cook over high heat stirring constantly until collard greens just start to wilt. Sprinkle with salt and serve.

Note: This is the recipe I prefer as a garnish for feijoada. Otherwise, mince 1 small onion and 2 cloves garlic and cook in butter until lightly brown. Add the collard greens and cook as above.

Recipe2:
200 g de couve-manteiga
1 dente de alho, picado
½ cebola pequena, picada
2 colheres (sopa) de azeite
50 g de bacon, em cubinhos
sal, a gosto

1. Lave muito bem a couve sob ?gua corrente. Retire os talos das folhas e empilhe uma folha sobre a outra.

2. Enrole as folhas, apertando bem, como se estivesse fazendo um charuto.

3. Coloque o charuto de couve sobre uma t?bua e corte, com uma faca afiada, em fatias bem fininhas.

4. Leve uma frigideira grande ao fogo baixo. Coloque o azeite e o bacon e refogue por 2 minutos.

5. Acrescente a cebola e refogue por 2 minutos. Coloque o alho e refogue por mais 1 minuto.

6. Coloque toda a couve picada na frigideira e refogue por mais 2 minutos, sem parar de mexer, ou at? que a couve comece a murchar.

7. Tempere com sal e misture bem. Retire a couve da panela (ainda bem verdinha) e sirva a seguir.
