TOBEY ARON'S MANDELBROIT
3 eggs
1/2 cup canola oil
1 cup white sugar
2 tsp. baking powder
1 cup crushed almonds or walnuts
3 cups white flour, sifted
cinnamon and sugar for sprinkling
Mix the first three ingredients well. Add the baking powder and mix well. Add the nuts and mix well. Add the flour, mixing well after each cup. Turn the drop of oil that's left in the measuring cup onto a cookie sheet lined with baking paper and spread it evenly over.
With wet hands, form three sausages and place them equidistant on the baking paper. Sprinkle each with sugar and cinnamon and bake in a moderate (180 ) oven until dark golden and firm. Remove from the oven and slice into 1.5 cm.-thick pieces with a sharp, non-serrated knife.
Place each slice on its side on the cookie sheet (you might need an additional one), sprinkle with cinnamon and bake until dark golden. Cool and put in an airtight tin.
