Marinated Mushrooms
500g button mushrooms
Wash and slice the mushrooms thinly.
Blanch in boiling water for a few minutes until slightly softened.
3-4 cloves of garlic, crushed
finely grated rind and juice of a small lemon
4 Tbsp extra virgin olive oil
2-3 tsp finely chopped Italian parsley
pinch of grated fresh nutmeg
1 tsp salt
Mix all the other ingredients together in a flat, shallow bowl.
Drain the mushrooms and add to the sauce in the bowl.
Leave in the fridge to marinate overnight.
Before serving, add salt and freshly milled black pepper to taste.
(serves 4-6)
